Burritos with Corn Tortillas

If you are in the mood for some Mexican and Tex-Mex food then these Burritos with Corn Tortillas are what you need. These burritos pack the most delicious and rich flavors, not to mention homemade salsa sauce, white sauce, salsa dip, and guacamole! It is simple to prepare and makes a great meal for food prep as well.

Meat:
1lb or 500g of ground beef
1 onion
4oz or 100g of corn
4oz or 100g or of red beans
3 Tbs salsa sauce (see the recipe below)
Spices to taste (salt, pepper, red pepper, chili, garlic powder)
Olive oil
Fry the meat in a heated pan, then add the onion and a little water.
After the meat is cooked, add three tablespoons of salsa sauce and half a glass of water, then after the mixture boils, add corn, red beans, and spices.

White sauce:
1 small cucumber
2/3 cup of Greek yogurt
1/2 cup of whole milk yogurt
Spices per taste (salt, pepper, dried parsley)
Add a dash of olive oil and 1/2 Tbs of freshly squeezed lemon juice
Finely chop the cucumber and add the rest of the ingredients and then combine everything.

Guacamole:
1 ripe avocado
1 small tomato
1 small onion
1 garlic clove
1 Tbs of finely chopped parsley
Half a red bell pepper or chili pepper
Spices per taste (salt, pepper, chili)
A dash of olive oil and 1.5 Tbs of freshly squeezed lemon juice
Mash the avocado with a fork, finely chop the other ingredients by hand or in a mincer and combine everything. add the spices at the end.

Salsa dip:
1 tomato diced
1 onion diced
Half a hot pepper or red pepper finely chopped
Finely chopped few strings of coriander, spring onions, garlic, and parsley
Salt and pepper per taste
Dash of olive oil
Once the ingredients are chopped and diced, combine them all together.

Salsa sauce:
2 tomatoes
1 Tbs of crushed chili peppers
1 Serano pepper,
1 clove of garlic,
1 medium-sized red onion, chopped
1 small coriander, chopped
Salt to taste

Add tomatoes, chili peppers, and Serano peppers in a saucepan, add a little bit of water and cook at a medium temperature for 5-10 minutes.

Then take them out and add them to a blender together with garlic and about 3/4 of the chopped onion. Mix well until you get a liquid mixture, then add chopped coriander and the rest of the chopped onion. Salt to taste.
